With the Holidays upon us it means it's baking season again. For me that means holiday breads. One of my family and friend's favorites is banana bread. (Incidentally I use the same recipe for all my breads just change up the main flavor ingredient and a few spices to match.) One of my secrets to being able to whip up banana bread in a hurry is 'frozen bananas'. Yes, that's right. Do you ever find yourself with that last 1 or 2 over ripe bananas sitting on the counter but you don't have time to make use of it? Well pop it in the freezer until you're ready to bake. Bananas keep weeks to months in the freezer. It turns brown and it looks disgusting when it's frozen but when you're ready you just put it in the microwave (skin and all) and then tear off the top and squeeze the banana into your bread batter like toothpaste. It's so easy and the flavor in your bread is amazing.
